Process: Select cherries are pulped and fermented in classic fermentation tanks between 14-18 hours. The coffee undergoes further washing to remove the mucilage. The coffee is sundried in open patios, allowing for a gradual and controlled dehydration process to enhance the intrinsic cup profile.
