Process: Whole coffee cherries are pulped and fermented for 36-48 hours depending on the ambient conditions. The coffee is thoroughly washed in clean water grading channels. The parchment coffee is laid out to dry on raised beds under parabolic shade for 5-7 days until the optimum moisture content is reached. Once fully dry, it is transported to a nearby dry storage to rest until the coffee is ready for final preparation at the dry mill.

This lot is comprised of coffee from 850 independent outgrowers who are local to A.A.S.H Nensebo washing station. Each producer has an average of 2-5 hectares of land and cultivate heirloom varieties that they manage and harvest. The smallholder producers surrounding the Werka Village, in the West Arsi zone, deliver freshly picked and ripe cherries to the washing station where it is carefully sorted and floated to select only the highest quality for processing.
